In the Grid Properties dialog box, there is no option for the grid origin.

Additional Information
The Offset option is the same as the Origin option in earlier versions of ArcGIS Pro. It is renamed to be more accurate.Workaround
In ArcGIS Pro 3.1 and earlier versions, there is the Origin option.
