In the ArcGIS Online: Add or delete field documentation (https://doc.arcgis.com/en/arcgis-online/manage-data/add-or-delete-fields.htm), hosted feature layers with joins are not listed as a restriction under the section 'Restrictions when adding or deleting fields'.

The development team has considered the issue or request and concluded it will not be addressed in the current release cycle. If this is still a concern, contact Esri Support Services.Workaround
Refer to the technical article: "FAQ: What are the reasons fields cannot be added to a hosted feature layer on the ArcGIS Online Data tab?" (https://support.esri.com/en/technical-article/000022377). The information is available there. If the user does not know about the article, they would not know that hosted feature layers with joins cannot add or delete fields.
