In the ArcGIS Field Maps (iOS) app, the Submit button in the Edit pane is grayed out for hosted feature layers with the 'Attributes only' option under the Update settings enabled.

Workaround

Select the 'Attributes and geometry' option under the Update settings to enable editing capability on the hosted feature layer.
