In ModelBuilder, the Export Table tool resets the field map parameters to the default setting instead of using the parameters defined after saving and closing ArcGIS Pro.

This issue is addressed in ArcGIS Pro 3.6.Workaround
Set the field mapping for the Export Table tool, take out the field mapping parameters, and set the field mapping parameters as Parameter.
