In ModelBuilder, the Export Table tool and the Export Features tool reset the field map parameters to the initial input instead of using the parameters defined.

This issue is addressed in ArcGIS Pro 3.5.Workaround
Set the field map parameters individually for each tool. The field map properties are specific to the table or feature layer being used as the input.
