Additional Information
This is an expected change in the software which has been documented. This change is made to resolve significant performance and threading issues related to the automatic updates of metadata content, particularly when enterprise databases are being used.
As a result, the item’s detailed properties is no longer updated in the metadata automatically when it is viewed, but there is a Synchronize button on the ribbon which can be used to update the properties stored in the metadata (and create metadata if it does not already exist) when an update is needed: https://pro.arcgis.com/en/pro-app/help/metadata/update-item-properties-in-metadata.htm

In the documentation "If metadata already exists for the item, it is displayed as-is in the details panel. Its content is not updated automatically for performance reasons. To view the most current information, synchronize the item's metadata."
Workaround
- Click on Catalog View from the View tab.
- Ensure the feature class is selected in the catalog.
- Click Synchronise within the Metadata tools in the menu.
- The Entity and Attribute Information is populated from the fields in the feature class.
