The behavior described is not a bug, as described in the first paragraph of https://pro.arcgis.com/en/pro-app/latest/help/data/geocoding/what-is-included-in-the-geocoded-results-.htm. ArcMap adds 'ARC_' fields as part of the geocode results, https://desktop.arcgis.com/en/arcmap/latest/manage-data/geocoding/geocoding-a-table-of-addresses-about.htm. In ArcGIS Pro 2.7, the functionality to specify what output fields are returned when using geocoding tools are added in as an optional output fields parameter in the geocoding geoprocessing tools in ArcGIS Pro and the Geocode Table tool. If user select minimal, the original field names from the input table are maintained with the original field names.
