In ArcGIS Pro, the Reference Grid options in the layout view disappear from the Grid drop-down list when used once and do not re-appear until the first grid is deleted.

Additional Information
This is by design. While a map frame can support multiple measured grids and graticules (for example a user want to display both UTM and state lane grids), only one Reference Grid per map frame is supported. Once the map frame has a reference grid, ArcGIS Pro does not show the Reference Grid as an option in the Grid gallery since the map frame already has one and user cannot add another.Workaround
Delete a reference grid from the Contents pane in the layout view. The Reference Grid options re-appear when there is no reference grid in the layout.
