In ArcGIS Pro, the output generated by the interpolation tools does not honor the custom color scheme set under the Color Scheme section of the Raster and Imagery option.

Additional Information
Non of the tools in Spatial Analyst honor this feature. The tools have pre-defined renderers and can be changed after the tool has run.Workaround
- From the Symbology pane, click on the drop-down for Primary Symbology.
- Select one among the drop-down [Stretch, Classify, Discrete Unique Value.]
- The color scheme changed to the desired color scheme that was set from the Raster and Imagery option
