In ArcGIS Pro, editing time in a Date field using the Date Time picker from the attribute table reverts the date to the date of the current day (today).

Workaround
- Manually edit the time on the attribute table.
- Edit the attribute field using the Attribute option under the Edit ribbon, and edit the time using the Date Time picker.
