This issue is addressed in ArcGIS Pro 3.5.Workaround
Create a new mosaic dataset by selecting the Add Rasters To Mosaic Dataset tool and import the input LAS dataset. For the Raster Type properties, set the following:
Data type: Intensity.
Interpolation: Triangulation.
