Bug

In a web map containing a service with three layers, when the second layer is removed in ArcMap or ArcGIS Pro and the feature service is overwritten, the second layer shows the name of the removed layer and its feature attributes are empty.

Its a known issue for now.

Workaround

After overwriting, remove the layer causing the issue from the web map and re-add it again.
