Importing graduated color symbology from a layer file in ArcGIS Pro and attempting to modify the class break values by opening the Symbology pane from the Symbol icon in Contents pane resets the symbology to a single color.

Additional Information

This is not reproducible in ArcGIS Pro 2.8. The symbology keeps the intended colors after following the workflow.
