If the schema of a feature service is changed in ArcGIS Online, then while adding the layer into ArcMap, only the first layer (Layer 0) is added.

Duplicate of NIM104467:Workaround
For data published by the same user:> Add the service from the My Hosted Services tab in Catalog window. All the layers will be shows correctly.For data published by one user, and shared with another user:> Open the service in a web map. Go to the Item Details page and "Open in ArcGIS Desktop". This will open the map with all the layers in ArcMap.Steps to Reproduce
