If a hosted feature service is published from a file geodatabase with a domain enabled, the "to show" drop-down box in the Change Symbols panel is blank if selecting the Color or Unique values symbology scheme in the Map Viewer on ArcGIS Online.

Workaround

1. Upload shapefile of the feature class to My Content.2. Use SDE database with domains.3. Do not use domains if publishing from a file geodatabase.
