If a field using subtypes is set as the label field in a FeatureLayer, then the coded value is displayed instead of the field description.

Additional Information
In order to view the subtype name on the labels, the Arcade SubtypeName function is required to be added to the label class. Below is a sample from the developer site showing how to set this up programmatically. This can also be configured through the MapViewer labeling panel.
