For schema changes on enterprise hosted feature services, use rest/admin API - updateDefinition operation, similar to ArcGIS online hosted services - https://developers.arcgis.com/rest/services-reference/update-definition-feature-layer-.htm Arcgis server admin should be used only for services published on a GIS Server.
