Bug
For the Create Raster Dataset tool, the optional parameter, Origin/Pyramid Reference Point is automatically populated with default values. Leaving the parameter as default results in a raster dataset displaying a slight shift after rasters are mosaicked into it.

Workaround
Explicitly set a pyramid reference point and select the top left coordinate of the top left input raster for the mosaic.
