Fields deleted in ArcGIS Pro before publishing a hosted feature layer to ArcGIS Online still appear in the pop-up window of the feature.

Additional Information
Whenever create a new webmap item, this webmap has its own configuration including popup configure and many other config like symbology and so on. From the Map Viewer, user need to update those configuration specifically. Whenever the feature service fields get changed, for example, delete a field, the popup configuration also need to update config, otherwise it will preserve your previous configuration.Workaround
Either from the Visualization tab or Map Viewer, configure the pop-up, make any changes, and save the layer. This changes the JSON for the item and removes extra fields.
