Field aliases may not be honored at the REST endpoint of a map service. This occurs when the field aliases are defined in the layer properties, the layer participates in an in-memory join in the map document, and the layer is a feature class in an enterprise geodatabase.

Workaround

Define the field aliases with the feature class properties. Right-click the feature class in the Catalog window, or use ArcCatalog > Properties > Fields. Or Use file geodatabases. Or Continue with the join, either by exporting the layer to a new feature class or using the Join Field geoprocessing tool, as explained in the following document, http://desktop.arcgis.com/en/arcmap/latest/tools/data-management-toolbox/join-field.htm Or Create a join using a database view, assign field aliases to the view, and publish the view.
