Export the shape file by right-clicking the layer in the Contents pane and selecting Data > Export Features. The field names from Excel are copied correctly. However, with the Feature Class To Feature Class geoprocessing tool, in the attribute table of the output shapefile, the name of the field is changed to the format 'Table name + attribute table file' name.

Additional Information

Workaround

Copy the shapefile to a file geodatabase. Rejoin the Excel spreadsheet and run the Feature Class To Feature Class tool to model. With the Feature Class To Feature Class tool, the attribute table is copying the correct field names.
