Duplicate of BUG-000130542Workaround
The issue is not reproducible in ArcGIS Enterprise 10.8. Logging for visibility purposes.
Alternatively, enable editing and sync on the hosted feature layer view. Return to the Data tab of the hosted feature layer and perform more edits to the field values. Refresh the hosted feature layer view, and note that the records display as expected.
