Diacritical marks in an attribute table are not exported to csv/txt format correctly in ArcMap 10.1, which they do in Version 10.

Workaround

Export the attribute table to dbf or export to a txt file. When the txt file is opened in Excel there is a wizard to format a text file as a csv.
