Workaround
- Use the REST Admin API and the updateDefinition operation:https://supt0012473.esri.com/server/rest/admin/services/Hosted/StatePlaneGeorgiaWest/FeatureServer/updateDefinition .
- Use {"datumTransformations": [] } as input to remove the existing transformation.https://developers.arcgis.com/rest/services-reference/update-definition-feature-service-.htm
