This issue was not reproducible in-house and will not be addressed at this time. If the issue persists, contact Esri Support Services. This issue is fixed as of ArcGIS Field Maps version 25.2.Workaround
The $originalfeature profile variable is not currently supported in the latest version of ArcGIS Field Maps. The $feature profile variable can be used in place of $originalfeature as a workaround.
