Use an Extract-Transform-Load (ETL) tool to write some data from the source. Import the schema from the source to set up the basic table structure but edit the default output CHAR data type for text fields to be NVARCHAR. Next execite a translation pumping through a couple of rows. Alter the output table with SQL Server to use NVARCHAR(MAX) storage.Steps to Reproduce
