This issue is not reproducible in ArcGIS Pro 2.5.Workaround
Export the data from Google sheets to a Microsoft Excel file, and upload the file to ArcGIS Online.
This workaround does limit the user's ability to collaborate on a spreadsheet.
If a user does not have Microsoft Excel installed, it limits the users' ability to edit the data once the data is exported.
