Customized fields for display are not honored in an ArcGIS Experience Builder Table widget when the data is set to Selected Features.

Workaround

Create a Table widget with the 'Select layers' mode. Select the layer and leave the Data setting as Default. For configure fields, select customize and choose the fields. After this configuration, navigate to the Action tab for the table configuration, and select 'Add a trigger'. Add a 'Record selection changes' trigger, select Framework, select Filter Data records, and select a feature layer to be the trigger and action data. After this, click on the Map widget in ArcGIS Experience Builder, and navigate back to the Action tab. Configure another Framework filtering data records action. After both of these filters are set up, the table widget should now show only the desired fields and should also filter when interacted with.
