Additional Information
A layer with a single point has the extent set to the extent of that first point. The instant a second point is added, the layer extent automatically updates to include it. The layer extent is not shrunk if data is subsequently deleted. Due to the infrequent occurrence of feature classes that only contain a single point and the ease of a workaround, this issue is not to be addressed.
Workaround
In ArcGIS Pro, edit the layer and add a second point.
