This issue is not reproducible in ArcGIS Pro 3.6 or ArcGIS Pro 3.5.4.Workaround
- Open each of the individual locators comprising the composite locator.
- Go to Locator Properties > 'Geocoding options'.
- Under 'Categories to Support', ensure that Address, along with Subaddress, is selected for each locator.
- After making this adjustment, the locator runs correctly with the Category option enabled.
