This is expected behavior and can be changed in the app settings in Collector for ArcGIS.Workaround
Go to Settings > Units > Coordinates > Decimal Degrees > Precision. This allows to change the default of six decimal places to a maximum of eight decimal places. The pop-up now displays the units at the specified amount of decimal places.
