Changing the coordinate system from the XY Coordinate System tab in the Properties dialog box for a feature dataset in ArcCatalog changes the SRTEXT field of the SPATIAL_REFERENCES table, causing any new feature classes using that SRID to display with the incorrect coordinate system name and information.

Workaround

Change the coordinate system using the Project geoprocessing tool from the Data Management toolbox instead of using the Properties dialog in ArcCatalog.
