Changing subtypes and accepting defaults replace not nullable field values with an empty character in ArcGIS Pro 2.5.

Workaround

• Create default values for each subtype code for each not nullable field.
• Do not apply default values when changing subtypes.
• Do not have not nullable fields in the data.
