Changing style to Unique symbols in ArcGIS Online automatically applies a drop-down of the current symbol values to the shown attribute when editing, limiting the values that can be entered directly in the field.

Additional Information

Mark certain 'other' values as valid in the 'Change Style' interface.

Workaround

Use the styling option for 'Counts and Amount (Color)', which allows values to have different colors depending on the range and also allows new values to be entered.
