ArcMap 10.5 does not recognize stretch types and use Percent Clip as default. This happens when the raster dataset is published to ArcGIS GIS Server and when it is added to ArcMap through ArcCatalog with the Stretch Type option is set to Percent Clip not Minimum - Maximum.

Additional Information

The raster functions are used to process pixels, the processing template set on the service will be used to process pixels in server side and send the processed pixels on client side for display. This also includes the stretch raster function. The stretch type used in renderer is different from raster function. The stretch renderer is applied on client side for visualization purpose, it does not change the pixels of the image service.

Workaround

Set the hillshade as the default processing template in the Service Editor of ArcMap before publishing<a href="https://www.screencast.com/t/vyVRNxbto" target="_blank">https://www.screencast.com/t/vyVRNxbto</a>.
