ArcGIS Pro needs to be restarted to display the changes in the fields view when changes are applied directly to the feature class in the database.

Additional Information

In ArcGIS Pro, the refresh functionality was added to the fields view. There are two field aliases: the dataset field alias and the layer field alias. There is no link between the layer field alias and the dataset field alias.

Workaround

Save the project, then close and reopen ArcGIS Pro, or select the layer directly from the Contents pane.
