In ArcGIS Pro, the WFS services client does not support complex data types. https://pro.arcgis.com/en/pro-app/latest/help/data/services/use-wfs-services.htm. Please see ENH-000113573.Workaround
The WFS service can be added to a project using the "WFS to Feature" tool. Check the box for Complex WFS. Use "https://havplan.dk/geoserver/plu/wfs?request=GetCapabilities" as input WFS Server.
