In ArcMap, metadata was synchronized automatically at Step 2 in the workaround steps, when metadata was initially viewed. In ArcGIS Pro this was found to cause performance problems when browsing items, and so it was a deliberate design change to stop automatically synchronizing metadata. This is documented in the View metadata help topic, where it says "For performance reasons, the metadata content is not updated automatically. To view the most current information, synchronize the item's metadata." https://pro.arcgis.com/en/pro-app/latest/help/metadata/view-and-edit-metadata.htm The appropriate workflow in ArcGIS Pro would be to initially click the View metadata option in the context menu, then click the Synchronize button on the ribbon to add properties of the data to its metadata, as documented in the Update item properties in metadata help topic: https://pro.arcgis.com/en/pro-app/latest/help/metadata/update-item-properties-in-metadata.htm Then, when you click the Edit button on the ribbon, the metadata content that is available in the editor will include information about fields in the item's attribute table. The help topics specific to editing and synchronizing metadata will be updated to also specifically indicate that metadata will not be synchronized automatically.

Workaround

Launch ArcMap 10.8.2 and locate the feature class in the Catalog Pane.
Right-click the layer and select Item Description.
Click the Edit button within the Item Description window (this initializes the FGDC synchronization).
Close ArcMap Application
Return to ArcGIS Pro, right-click the feature class, and select Edit Metadata. The field details should now be available under the Fields option.
