Additional Information
The Fields view has two options for 'Current Layer' (seen on the top of the Fields view); either the map layer or the data source. When opening the Fields view from a map layer, it opens in the 'map layer' option. Any changes made under this option survive while the layer survives. Once it is removed and re-added, it becomes a new layer in ArcGIS Pro, and the database settings are reset.
The reason it works from the Catalog pane is because that opens the view under the 'Data Source' option, which applies to any time the data is added to a map.
Workaround
Right-click the data in the Catalog pane and select Data Design > Fields to save the changes made to the alias.
