Additional Information
This is not a hosted services issue and ArcMap is publishing different content as compared to ArcGIS Pro. Also, advanced symbols can be published in ArcGIS Pro by unchecking the 'Use symbols compatible with all clients' check box. This writes the advanced symbology to the web map and is honored in Map Viewer.Workaround
- Add the layer to ArcGIS Pro.
- Click the Share tab > Web Layer > Publish Web Layer.
