This issue is addressed in ArcGIS Pro 3.4 and 3.3.2.Workaround
Use the Spatial Join (Analysis) tool instead of the Add Spatial Join (Data Management) tool.
The Field Map parameter is not updating when changing the input layer. On the Field Map burger button, click Reset. This causes the previous fields to be removed and the new ones to be updated.
