Within ModelBuilder, the Permanently Join Fields parameter for the Add Spatial Join tool is not recognized by the Calculate Field tool within the provided Fields for the Expression.

Workaround

To work around this, export the output from the Add Spatial Join tool with the Export Features tool, and then have this output go into the Calculate Field tool (Add Spatial Join > Export Features > Calculate Field).
