Editing data that is projected on the fly, although allowed, is not recommended. Refer to the statement below stated in the ArcMap documentation from the following link, https://desktop.arcgis.com/en/arcmap/latest/manage-data/editing-fundamentals/about-editing-data-in-a-different-projection-projecting-on-the-fly-.htm.
"When a projected feature is edited, all edits occur in the data frame's coordinate space and are projected back to the feature's native coordinate system as the feature is stored. For most editing operations and most coordinate system transformations, the integrity and accuracy of the feature is maintained. However, it is important to note that certain editing operations may produce unexpected alignment or accuracy problems, depending on the coordinate systems being used."
Although it is mentioned in the ArcGIS Pro help system, a dedicated topic much like the topic in ArcMap is to be added.
Workaround
Set the coordinate system of the map to a different coordinate system, for example, WGS 1984 Web Mercator (Auxiliary Sphere), and trace the features.
