When scheduling any geoprocessing tool, a snapshot of the parameter values specified in the tool dialog is captured and put into a Python script that is run by the scheduling system. The Export Features tool has a Field Map parameter with the list of fields to be included in the output. The scheduled Python script has a snapshot of the fields at the time the tool was scheduled set into the Field Map parameter, and any new fields added to the input cannot be automatically included. An enhancement to Export Features is planned to have a Field Mapping mode that includes an option to generate the field list dynamically at runtime rather than using the parameter, which will be useful for this case. This is a near-term enhancement.

Workaround

Schedule the Copy Features tool. Reschedule the Export Features tool after re-specifying the updated input, and verify the new fields are included in the Field Map parameter.
