Duplicate of BUG-000130945: The issue is a duplicate of BUG-000130945.

Workaround

  • Running the Edit Raster Function tool without the mosaic dataset added to the map does not experience this issue. 
  • Alternatively, removing and re-adding the dataset to the map displays the dataset as expected, with the new function chain applied.
