The Data Interoperability Quick Export tool does not preserve field names from the attribute table of a feature class when exporting to the Excel format.

Workaround

Use ArcToolbox > Conversion Tools > Excel > Table to Excel. The output format is .xls only, not .xlsx, but the field names are preserved. Other option is to use the field alias as the column header, domain and subtype descriptions.
