Map service export request using the DynamicLayers parameter changes the map service symbology.

Workaround

For map image layers, disable dynamic layers to prevent this behavior. In ArcGIS Server Manager, navigate to Services > [Service] > Capabilities > Dynamic Workspaces, uncheck Allow per request modification of layer order and symbology, then Save and Restart. However, note that the capabilities provided by dynamic layers will no longer be available.
