In the ArcGIS Online: Add or delete field documentation (https://doc.arcgis.com/en/arcgis-online/manage-data/add-or-delete-fields.htm), hosted feature layers with joins are not listed as a restriction under the section 'Restrictions when adding or deleting fields'.

The information is available there. If the user does not know about the article, they would not know that hosted feature layers with joins cannot add or delete fields.
