If the last column is empty in an Excel file (.xlsx), the first row is not recognized as the field name row when adding the Excel file in ArcGIS Pro.

This is likely an issue on the Excel-end more so than how Pro reads the fields. Get the correct table (with A1, A2, and A3 as field names) by running the "Excel to Table" geoprocessing tool.
