The shape field cannot be hidden for spatial tables published as a WFS service. This will be documented as a known limit. Alternatively, publish a WFS service from a non-spatial table (instead of hiding the geometry field of a spatial table). WFS services honor the visibility setting of a regular attribute field when published, as fixed in BUG-000109441.Workaround
Use ArcGIS Pro 3.4.3.
